Thai Pork and Apple Rissoles with Asian Slaw

The Rissoles

500g pork mince
1 cup sourdough breadcrumbs
1 grated apple
1 egg (lightly beaten)
1 ½ tablespoons of thai green curry paste

Place all ingredients in a bowl and mix together thoroughly with your hands, roll into 10 rissoles and flatten slightly, then place in the fridge to chill for about 30 minutes (if time allows). Drizzle a little olive oil in a fry pan over medium heat and cook for 5 minutes each side or until browned and cooked through. Alternatively, you can cook on the barbecue!

Asian Slaw

Thai Pork and Apple Rissoles with Asian Slaw

½ red cabbage, shredded
2 carrots, finely shredded
½ red onion, thinly sliced
1 fennel bulb, shredded
Handful coriander leaves
1 tablespoon rice vinegar
1 teaspoon caster sugar
1 tablespoon soy sauce
1 tablespoon lime juice
1 tablespoon fish sauce
1 red chilli, finely chopped, seeds removed

Place the cabbage, carrot, onion, fennel and coriander in a bowl. Combine the rice vinegar, sugar, soy sauce, lime juice, fish sauce and chilli in a small bowl and whisk to combine. Toss the slaw with the dressing and serve with the rissoles! Easy!!
